Georgina’s Chicken & Leek Bake

I tried this in my house (a group of seven girls) and it went down extremely well as it was cheap and comforting. This is the perfect supper for when you’ve run out of inspiration last minute as you can put pretty much put anything in it.

Ingredients: (Serves 7)

6 Chicken Breasts Sliced into Strips
1 Pack of Bacon Sliced into Strips
4 Leeks Chopped into 1cm Strips
1 Bag Spinach
3 Tablespoons Thyme
2 Packs of Sunbites (Sour Cream and Black Pepper Flavor)
1 Onion Finely Chopped
½ Pint Chicken Stock
1 Tablespoon Plain Flour
200 ml Apple Juice
500 ml Cream
2 Teaspoon Mustard
250g Cheddar Cheese (grated)

Total Cost:

£20 (£2.86 per person)

Method:

1)     Heat a little oil in a large frying pan over a medium heat and add the chopped onion.

2)     After two minutes add the chicken.

3)     Once the chicken begins cooking (3 minutes) add the bacon and leeks.

4)     Leave the frying pan for ten minutes on a low heat stirring occasionally to avoid anything burning.

5)     Tip all the ingredients from the pan into a deep roasting tin.

6)     Pour boiling water from the kettle over the spinach in a pan and wait two minutes until soggy, now drain and scatter the spinach over the chicken mix.

7)     Now for the sauce: First melt a little butter with the flour in a pan.

8)     Once the butter has melted begin to slowly pour some stock in, stirring constantly, so the mixture thickens and simmers.

9)     Once half is added, add the apple juice, thyme and cheese.

10) Once the cheese has melted add cream.

11) The sauce should be the consistency of Heinz tomato soup- if too thick; add more stock and if too thin add more flour.

12) Now pour this over the chicken and this can be put into the fridge until needed!

13) To cook sprinkle crumbled up sunbites over the top and any homemade breadcrumbs if you have some bread around.

14) This should take 20 minutes in an 180c oven.

When we had this we had it with salad, broccoli and roasted butternut squash but you can substitute those for anything you fancy!
