It’s a Tuesday LCR and it’s also pancake day – so it’s about time you learnt to combine your two greatest loves.  

Pancake day is the middle child of the post-Christmas celebrations – not as boozy as New Years’ Eve and not as full of chocolate and regret as Easter. For many students, the idea of spending money on ingredients in an attempt to flip a crusty lump of pastry isn’t exactly fun,  but here’s our official guide for how to get battered on pancake today.

These three simple recipes will put a bit more kick into your mix…

The Strongbow pancake

For this recipe, all you need is a can of Strongbow, an egg, milk and pancake mix.

We added half a can of Strongbow as a substitute for water and mixed it with the rest of the ingredients.

The result is a crispy crepe that tastes like your favourite can of cider. Not guaranteed to get you battered, but definitely a good start.

If you want to change things up a bit, substitute the cider for a Fosters or Carlsberg depending on personal preference.

Strongbow pancake with vodka syrup

Vodka and pancakes is the combination you’ve been waiting for your entire life. This one’s slightly fancier and more time-consuming, but really compliments the Strongbow recipe above so if you’re ready for pres a little too early then it’s worth a try.

Mix three shots of vodka with two tablespoons of golden syrup until fully combined. Add more shots or syrup depending on the desired effect. Drizzle the vodka laced syrup over the pancakes and enjoy.

The vodka syrup is a clear step up from the Strongbow pancake, and depending on how much vodka you use, the mixing bowl wont be the only thing that’s messy.

Peach schnapps crepe

Finally, for those with a more refined taste, the peach schnapps crepe. First add one part schnapps to what should now be your staple Strongbow pancake mix, making sure to whisk thoroughly.

While frying your pancake, add four shots of schnapps to two tablespoons of syrup – the same way as the vodka syrup. Either cover the crepe in the syrup or use it as a dipping sauce for your freshly-rolled pancake and voila, peach schanpps perfection.

Although not as strong as the vodka syrup, the peach schnapps crepe is delicious and less obviously alcoholic tasting.

By the time it came to eating the crepe covered in Schnapps syrup, the vodka was beginning to take its toll.

All these recipes make half decent pancakes. Surprisingly none were as disgusting as they sound, especially the Strongbow batter.

Just make sure you keep the batter to a low percentage drink because if you substitute the water for straight vodka then you’re never going to make it to the doors of the LCR.
