York student and former Bake Off contestant Freya Cox is bringing out a baking book

Freya studies psychology at York and appeared on The Great British Bake Off in 2021


University of York student and former Bake Off contestant Freya Cox is bringing out a vegan baking book.

Freya studies Psychology at York and came eighth in last year’s series of The Great British Bake Off.

The book is titled “Simply Vegan Baking” and will be published on the 29th of September this year.

In a post on Instagram Freya said she is “so excited to finally announce Simply Vegan Baking to the world. It is a vegan baking book with pretty much any sweet recipe you could wish for, from cakes, biscuits, and bread to traybakes, pastry and desserts. Each recipe is simple to follow and uses accessible ingredients so everyone can make them. There’s something for everyone, whether you are vegan or not!”

 

She continued: “I have worked so hard on this book, and I’m genuinely over the moon with every part of it. I am so proud of each and every recipe inside, and I really hope you all will love it as much as I do.”

Freya broke records for being not only the youngest ever baker on the show but also for being the first-ever vegan baker in the tent.

The psychology student studies at York but lives in Scarborough with her parents so she can care for her horse, Winnie. She is also part of York’s Equestrian Society.

Simply Vegan baking will be out on the 29th of September and can be preordered here.
