Pancake day: a simple recipe

What can be easier than pancakes? Avoid the shop bought rubbish and rustle up these beauties!

Please note: this isn’t a Scotch pancake, so Scots may think of this as a crepe.

Ingredients

  • 100g flour of your choice (just not self-raising)
  • 1 egg
  • 250ml milk

Method

  1. Sift flour into bowl.
  2. Make a well in the flour and add milk and egg.
    Mix together to form a thick batter.
  3. Heat frying pan over a medium heat and melt butter, ensuring you grease the entire pan.
  4. Add one ladleful of batter to pan. If you don’t own a ladle half a mug is roughly the same measurement. Quickly swirl the batter around so you have a thin layer covering the whole pan.
  5. Cook for 1 minute on each side.
  6. DONE

Top with anything sweet. Chocolate, banana, and peanut butter is my favourite: call me Elvis!
