Cooking With Hannah: Dinner for a Quid

This is a simple, fresh and healthy dish with lots of flavour. The quantities listed serve one but can easily be doubled to serve more.

You will need:

100g spaghetti/linguine (10p, 50p/500g in ASDA)

75g (½ tin) of tuna (44p, 98p/tin in ASDA)

1 lemon (16p, 49p/3 in ALDI)

1 clove of garlic, crushed (a matter of pence, 30p/head in ASDA)

¼ tsp chilli flakes (a matter of pence, 71p/28g in ASDA)

50g spinach, wilted (10p, £1.89/kg in ASDA)

1 tbsp extra-virgin olive oil (10p, £1.38/250ml in ASDA)

Salt (a matter of pence, 42p/65g in ASDA)

Method

Bring a pan of water to the boil, salt it and add the pasta. Cook as directed on the packet (usually 8-10 minutes).

Drain the tin of tuna and place half in a bowl. Add the zest of the lemon and juice of half, garlic, spinach and chilli flakes to the bowl. Mix until everything is combined.

When the pasta is cooked, drain it, return to the pan and add the oil.

Add the tuna mix to the pasta, mix well and serve immediately.

Yum!

Total cost: £1, accounting for the use of some chilli flakes, salt and one garlic clove. Cheap, healthy and delicious, what’s not to love?
