The Uni’s Sport and Health Sciences department has undertaken research to prove that beetroot juice has performance enhancing qualities, despite its less-than-appealing taste.

The high nitrate content of beetroot juice has been directly linked to the chemical processes required to make muscles work efficiently during bouts of high intensity exercise.

During trials, participants were either given ordinary beetroot juice complete with nitrates, or altered juice with nitrates removed. Those who drank the nitrate-rich juice performed significantly better when exercising.
